I made it using the exact same recipe I learned at the restaurant where I worked in Tuscany.I was surprised when the elderly chef who taught me told me, "Don't add salt."The only seasonings are anchovies and capers.It's topped with marmalade of red onions (braised in balsamic vinegar).

Cod milt arrabiata

Shirako (fish milt) has different ranks, with the highest rank being 5 Special.I saw some izakayas and Chinese restaurants serving cod milt mapo tofu and thought it looked delicious, so I decided to make arrabiata with it.The cod roe is melted into the sauce, resulting in a mild, slightly tomato-cream-like finish.

Grappa

It is a distilled spirit made from grape pomace.Under EU law, only grappa made in Italy can be called grappa.Grappa is a state monopoly, so distillation at wineries is not permitted.Within those rules, the producer we sourced this time, Destina, was granted permission to produce a very small amount of grappa.600 bottles per year.Definitely try this at the end of your meal!
